Ingredients

  • 2 cups all purpose flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup granulated sugar

  • 1 egg

  • 1/2 cup melted butter

  • 1/2 teaspoon vanilla

  • 2 tablespoons milk

  • 3 ripe bananas, mashed

  • 1/2 cup chopped pecans

  • 1/4 cup brown sugar

Directions

  • Preheat oven to 350 degrees
  • Grease bundt pan or loaf pan with shortening or baking spray.
  • Add flour, baking soda, and salt to a medium bowl and whisk together.
  • In a separate bowl, mix sugar, egg, oil, and vanilla and stir until combined.
  • Pour the sugar mixture into the flour mixture and fold together until smooth. Careful not to over mix, fold mixture together just until the flour in incorporated.
  • Add the bananas to the empty bowl (from the sugar mixture) and using a potato masher or immersion blender, mash or blend the bananas until smooth.
  • Fold the bananas into the mixture just until mixed.
  • Using a small food processor blend the pecans and brown sugar together. Sprinkle half the mixture around the greased bundt pan.
  • Pour 1/3 of the banana mixture into the bundt pan, sprinkle remaining nut mixture around the pan, add remaining banana mixture.
  • Bake on center rack for 40-50 minutes or until a knife comes out clean.
